Chocolate-making is not easy; that's why there are so few chocolatiers who make it by hand. Our hands-on classes teach you the most important aspects of chocolate-making. You will develop the instincts to know at a glance or feel if chocolate is in temper. The only way to master these techniques is to practice, practice, practice, so you will make everything yourself with our supervision. We offer small classes with only one or two students to give you almost-exclusive attention and enable us to custom-tailor the session to each student. The skills you will learn are adaptable to your home kitchen. With just a microwave, chocolate, a candy thermometer and a few tools, you, too, can become a master chocolatier.
BEGINNER CLASS: The one-day class begins with an overview of chocolate and moves on to tempering by hand, using a microwave. You will make chocolate bark with a variety of inclusions that each student can select (almonds, dried cherries, peppermint). You will also hand-dip pretzels, Graham crackers, fresh fruit, nut clusters and whatever else we feel like making, while keeping the chocolate in temper as we go. You will take home everything you make, so bring a cooler with ice packs if you can. Cost per person (including ingredients): $275, based on no more than two students.
ADVANCED CLASS: This one-day class is for people who are already familiar with the basics of tempering. We cover truffles and their flavorings, as well as solid and filled molded chocolates. Not all truffles are created equal. A truly superb chocolate truffle should be neither gooey nor grainy. There is an art to achieving the perfect consistency that comes with years of knowledge and practice. The class takes about four hours, give or take, including questions and some fun and laughter…otherwise, what's the point?! You will take home what you make, unless you can't resist eating your creations right away. Cost per person (including ingredients): $350, based on no more than two students.
TAKE BOTH THE BEGINNER AND ADVANCED CLASSES: Take both the beginner and advanced classes in one weekend for $600.
OTHER INFORMATION
You will be able to purchase bulk chocolate to take home with you, as well as some small utensils and packaging.
Classes are held Fridays and Saturdays at 9am ET from January through October.
